Issei Noodle Carlisle opened in April 2007 under Naomi, a first-generation Japanese-American immigrant, and Robert Pham, a Vietnamese-Laotian immigrant. Through the years they have proudly served the Carlisle community, raised five children that have all worked in the family ramen shop, and are now raising seven (soon to be eight) grand-children.
Issei Noodle Lancaster opened in May 2013 under Andre (the oldest son) and Donna Pham. In June 2022 Andre took the opportunity to travel to Tokyo to study the art of making ramen noodles. After completing the Rajuku ramen master class Andre brought that knowledge back to Lancaster to prepare for a complete overhaul of the menu.
In March 2023 the restaurant moved into a larger location where the menu showcases fresh ramen noodles made daily.
